Begin by preparing the strawberries. In a medium bowl, combine the sliced strawberries with the granulated sugar. Gently toss the strawberries to ensure they are evenly coated. Allow them to sit at room temperature for approximately 15 minutes to macerate.
While the strawberries are macerating, prepare the whipped cream mixture. In a separate mixing bowl, use a hand mixer or whisk to whip the heavy cream along with the vanilla extract until soft peaks form. Once achieved, delicately fold in the Greek yogurt using a spatula until the mixture is smooth and well combined.
Now it’s time to assemble your trifle. In a trifle dish or individual serving glasses, begin with a layer of the bite-sized cake pieces at the bottom.
Next, spoon on a generous layer of the macerated strawberries, making sure to include some of the syrup that has formed from the strawberries for added sweetness and flavor.
Carefully add a layer of the whipped cream mixture over the strawberries, ensuring an even covering.
Repeat the layering process: cake, strawberries, and whipped cream, until you reach the top of the dish. Make sure to end with a luscious layer of whipped cream for a beautiful finish.
For the final touch, garnish your trifle with a few slices of fresh strawberries arranged artfully on top, and add a sprig or two of fresh mint leaves for a pop of color and freshness.
