Begin by preheating your oven to 350°F (175°C) to prepare for baking.
Take a Ritz cracker, and with a generous spoon, spread creamy peanut butter on one side. Place another cracker on top to create a delightful sandwich. Repeat this process until all crackers are paired for sandwiches.
Line a baking sheet with parchment paper and carefully arrange the cracker sandwiches on the sheet, making sure they are not too crowded.
In a microwave-safe bowl, add the milk chocolate chips. Melt the chocolate in the microwave in 30-second bursts, stirring after each interval until the chocolate is completely smooth and melted.
Once the chocolate has melted, take each peanut butter-filled cracker sandwich and dip it into the chocolate, ensuring it’s well-coated. Gently shake off any excess chocolate.
Place the chocolate-covered sandwiches back onto the parchment-lined baking sheet.
For an uplifting flavor, sprinkle a pinch of sea salt over each cookie, then lightly dust the tops with powdered sugar for a sweet touch.
Place the baking sheet in the preheated oven and bake for 6-8 minutes, or until the chocolate appears slightly set.
