Instructions
Start by preheating your oven to 400°F (200°C). While the oven heats up, line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
In a blender, add the diced mango along with the finely chopped habanero peppers. Pour in the honey, soy sauce, apple cider vinegar, olive oil, garlic powder, onion powder, and a pinch of salt and pepper. Blend the mixture on high until it’s completely smooth, creating a vibrant and spicy marinade.
In a large mixing bowl, add the chicken wings and pour half of the mango habanero marinade over them. Toss the wings thoroughly to ensure they are evenly coated in the marinade. Be sure to set aside the remaining marinade for later use.
Arrange the marinated chicken wings on the prepared baking sheet in a single layer, ensuring they have enough space between them for even cooking.
Bake the wings in your preheated oven for about 25-30 minutes, flipping them once halfway through to achieve golden-brown and crispy skin all around.
While the wings bake, take the reserved marinade and pour it into a small saucepan. Heat it over medium heat and bring it to a gentle simmer. Allow it to cook for approximately 5-7 minutes until it thickens slightly into a glaze. Keep a close eye on it to prevent burning.
When the wings are fully cooked and crispy, remove them from the oven. Use a brush or spoon to coat them generously with the thickened glaze, ensuring every wing is covered in the sweet and spicy goodness.
Return the glazed wings back to the oven for an additional 5-10 minutes. This will help set the glaze and enhance the flavor.
Once done, take the wings out of the oven and let them rest for a few minutes; this helps the flavors to settle.
Just before serving, sprinkle freshly chopped cilantro leaves over the wings for a pop of color and freshness.
