Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon until thoroughly combined. Set aside.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and Greek yogurt until smooth.
Gradually add the dry ingredients to the wet ingredients, gently stirring until just combined.
Fold in the diced apples and chopped walnuts (if using) until evenly distributed.
Pour the batter into the prepared loaf pan, smoothing the surface. Mix together the cinnamon sugar and sprinkle it over the top.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For an appealing presentation, slice the bread and serve it warm with a light dusting of powdered sugar on top. A pat of butter can be added for a rich, creamy experience.
