0.75cupunsalted butter, softened to room temperature
1cupbrown sugar, firmly packed
0.5cupunsulfured molasses
1largeegg
1teaspoonpure vanilla extract
1cuppowdered sugar (for frosting)
2tablespoonsmilk (for frosting)
2tablespoonsoptional toppings: Sprinkles or crushed candies
Instructions
Preheat the Oven: Set your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by greasing it lightly or lining it with parchment paper for easy release after baking.
Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, ground nutmeg, baking soda, and salt until well blended. Set this mixture aside.
Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to beat the softened unsalted butter and packed brown sugar together until the mixture is light, airy, and fluffy. This should take about 2-3 minutes.
Incorporate Wet Ingredients: Add the molasses, large egg, and pure vanilla extract to the butter-sugar mixture. Mix on medium speed until all the ingredients are thoroughly combined and smooth.
Combine Wet and Dry Ingredients: Gradually incorporate the reserved dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the bars tender.
Transfer Batter to Pan: Use a spatula to evenly spread the gingerbread batter into the prepared baking pan, smoothing the surface to ensure even baking.
Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Cool the Bars: Remove the baking pan from the oven and allow the gingerbread bars to cool in the pan on a wire rack for about 10 minutes. Then, carefully transfer them to the rack to cool completely.
Make the Frosting: In a mixing bowl, combine the powdered sugar with 2 tablespoons of milk. Stir until the mixture is smooth and spreadable. If the frosting is too thick, add additional milk, one teaspoon at a time, until desired consistency is reached.
Frost and Decorate: Once the bars are completely cool, spread the frosting evenly over the top using a spatula. For a festive touch, sprinkle colorful sprinkles or crushed candies on top of the frosting before it sets.
Serve: Cut the gingerbread into square or rectangular bars for serving. Enjoy these delightful treats with family and friends!
