Instructions
Preheat the oven to 350°F (175°C) and prepare a 9x13-inch baking dish by lining it with parchment paper.
In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined.
In a large mixing bowl, cream the softened unsalted butter with the granulated sugar using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
Add the large egg, vanilla extract, and almond extract to the butter and sugar mixture, mixing on low until well combined.
Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
Spoon the cookie dough into the prepared baking dish and spread it evenly. Bake for 20-25 minutes until the edges are lightly golden and a toothpick inserted into the center comes out clean.
Allow the cookie bars to cool in the pan for about 10 minutes, then lift them out using the parchment overhang and transfer to a wire rack to cool completely.
In a separate bowl, whisk together the powdered sugar and milk until smooth and creamy. Add food coloring if desired.
Once the cookie bars are completely cooled, spread the frosting generously over the top.
Sprinkle colorful sprinkles over the frosted surface for decoration.
Cut the cookie bars into squares or rectangles and serve.
