Instructions
In a large mixing bowl, combine the softened cream cheese, buffalo sauce, and sour cream. Using an electric mixer or whisk, blend until the mixture is smooth and well incorporated without lumps.
To the creamy base, add the shredded chicken and both types of cheese: shredded cheddar and crumbled blue cheese, if desired. Fold the ingredients together gently until every piece of chicken and cheese is thoroughly coated in the creamy sauce.
Carefully transfer the creamy chicken mixture into a crockpot, spreading it out evenly across the bottom.
Secure the lid on the crockpot and set it to cook on low for 2-3 hours. During the cooking time, stir the dip halfway through to promote uniform heating and melting of the cheeses.
After the cooking time is complete, stir the dip again to recombine any ingredients that might have separated.
Taste the dip and add more buffalo sauce if you prefer a spicier kick. Adjust to your liking!
Serve the dip warm, garnished with fresh sliced green onions on top for a pop of color, and provide a platter of tortilla chips, celery sticks, and carrot sticks for delicious dipping.
