Begin by preparing your workspace: Line a baking sheet with parchment paper.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil, if you’re using it. Heat the mixture in the microwave in 30-second intervals, stirring gently in between each interval until fully melted.
Once the chocolate is melted, dip each mini pretzel halfway into the melted chocolate, allowing excess to drip off, then place back onto the prepared baking sheet.
While the chocolate coating is still wet, sprinkle the crushed peppermint candies or candy cane pieces over the chocolate-covered section of each pretzel.
For an added flavor twist, sprinkle a tiny pinch of sea salt over each pretzel.
Continue this dipping and decorating process until all pretzels have been coated.
Transfer the baking sheet to the refrigerator and chill for about 30 minutes, or until the chocolate has completely hardened.
