Instructions
Prepare the Strawberries: Begin by ensuring that your strawberries are completely dry after washing them. Any remaining moisture can interfere with the chocolate adhering properly. Place them on a clean kitchen towel or paper towel to absorb any excess water.
Create the Pumpkin Chocolate Mixture: In a medium-sized bowl, combine the pumpkin puree and pumpkin spice. Stir the mixture thoroughly until it is well blended, and then set it aside for later use.
Melt the Chocolate: Using a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Place the bowl in the microwave and heat in 30-second intervals, stirring after each round, until the chocolate is completely melted and smooth. Be cautious not to overheat the chocolate.
Dip the Strawberries: Grasp a strawberry by its stem and immerse it into the melted chocolate, ensuring that the entire strawberry is coated evenly. Allow any excess chocolate to drip off back into the bowl.
Incorporate the Pumpkin Mixture: While the chocolate is still warm, use a small spoon to take a dollop of the pumpkin mixture and gently spread it over the top half of the chocolate-coated strawberry. This will create a delightful contrast of flavors.
Chill the Strawberries: Arrange the dipped strawberries on a tray lined with parchment paper. If desired, sprinkle a tiny pinch of coarse sea salt on top for an extra burst of flavor. Continue this process until all your strawberries are beautifully dipped and adorned with pumpkin goodness.
