Instructions
Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
Steam the cauliflower florets in a pot or microwave until they are fork-tender, which should take about 5-7 minutes. Once done, drain them well and allow them to cool for a few minutes.
After the cauliflower has cooled, take a clean kitchen towel and transfer the florets into it. Firmly twist the towel to wring out as much excess moisture as possible — this step is crucial for achieving crispy tots.
In a large mixing bowl, combine the well-drained cauliflower, shredded cheddar cheese, almond flour, chopped green onions, garlic powder, onion powder, paprika, salt, and pepper. Use a fork or spatula to mix until all ingredients are evenly incorporated.
Pour the beaten egg into the mixture, and stir until all components are thoroughly combined, resulting in a dough-like consistency that holds together when shaped.
Using your hands, form the mixture into small tater tot shapes, roughly 1 to 1.5 inches in length, and place them in a single layer on the prepared baking sheet.
Lightly spray the tops of the tots with olive oil, which will help them achieve a golden and crispy texture as they bake.
Bake in the preheated oven for 20-25 minutes, or until they turn a delightful golden brown and crispy. Carefully flip the tots halfway through the baking time to ensure even cooking.
Once they are perfectly baked, remove the tater tots from the oven and allow them to cool for a few minutes before serving.
